His-and-hers signature cocktails, with the batch math

A signature drink is a recipe plus a quantity. Pick one stirred, spirit-forward drink and one lighter, sparkling drink, then batch each at the ratio below. The table scales both recipes to 25, 50, and 75 servings so the bar order follows the guest count.

What are good his-and-hers signature cocktails?

A bourbon Old Fashioned and a gin French 75 make a useful pair: one stirred and spirit-forward, one lighter and sparkling. Batch the Old Fashioned at 2 oz bourbon, 0.25 oz syrup, and 2 dashes bitters per drink; batch the gin, lemon, and syrup for the French 75 and add sparkling wine per glass.

The two recipes

An Old Fashioned is forgiving to batch because every ingredient except the ice can sit together. A French 75 is less forgiving because the sparkling wine goes flat; batch the base and top each glass at service.

Per-drink ratios. Use the same jigger for every batch; volume, not brand, is what scales.

Batch sizes

These batches assume one serving per guest who chooses that drink. If both drinks are offered alongside beer and wine, cut each batch by the share you expect to pour. A 100-guest wedding does not need 100 of each.

Base batch before dilution and ice. A stirred Old Fashioned also needs about 20% water by volume; add it when you chill the batch.

Non-alcoholic counterparts

Give the zero-proof guests the same shape, not a sad soda. A strong tea and orange build can stand in for the Old Fashioned; a citrus and soda build with a splash of NA sparkling wine can stand in for the French 75. Batch the base the same way and keep the sparkling separate.

  • Old Fashioned stand-in: strong black tea, orange peel, a little syrup, bitters if the guests accept them.
  • French 75 stand-in: lemon, syrup, soda, and an NA sparkling wine to top.
  • Label both dispensers clearly; a guest should not have to ask twice.
